Authentic Odisha Aloo Dum/Alu dum/Dam aloo(is paired with dahi bara/dahi vada and Luchi)

As Promised to share the recipe of Alu dum for dahi bara/dahi vada.
Aloo dum/alu dum potato based dish, it is a part of the traditional Odisha cuisine from the Katak and Bhubaneswar is specially paired with famous dish "Dahi Bara/ Dahi Vada" in the Indian state of Odisha. The potatoes, usually smaller ones, are first deep fried, then cooked slowly at low flame in a gravy with spices. Dum Aloo is a popular recipe cooked throughout India. In Bengal, it is a specialty dish eaten mostly with Luchi and is known as "Aloor dum".

For Aloo dum/alu dam

Potatoes(4 medium size) chopped into cubes
Masala Paste(grind onion,garlic,ginger,coriander seeds,cumin,dry red chilli,green chiili,cinnamon, cardamom)
1 Medium Tomato (fine slice)
1 bay leaf

Mustard oil 10 tbsp
11/2 tbsp Kashmir chilli powder
1/2 tsp turmeric powder
1/2 tsp sugar

Cinnamon 2 inch(Crushed into powder)
Salt to taste
1 tbsp freshly chopped coriander leaves
11/2 cup Water

For Masala

2 Medium onions(roughly chopped)
Garlic 8-10 pods
Ginger 1inch (roughly chopped)
Coriander seeds 1tsp
Cumin Seeds 1tsp
2 Dry red chilli
1 Green chilli

1 inch cinnamon
2 cardamom

Procedure to Make Masala:

Place all ingredients into mixie jar and put little water and  grind to paste.

  • Place a heavy bottom pan or kadhai put the oil and once the oil is heated, add the sugar and let the sugar to caramelized (don't burn it). 
  • Now add in tomatoes and cook till the tomatoes turn little mushy.
  • Now add bay leaf and saute for while
  • Now add the turmeric and chili powder,saute it for a few seconds
  • Add potatoes and saute for 3-4 minutes
  • Time for masala to go in, saute it till it roasted and cooked( all raw smell of masala goes off and oil start coming from sides)
  • Now add water and bring this whole thing to a good boil, cover and simmer till oil floats on top.
  • Now add cinnamon powder and cover for a while.
  • Garnish it with chopped coriander leaves.
  • Aloo dum/aloo dam serve  warm with dahi bara/ dahi vada or hot with rice or chapatis( Indian breads).
